We sure seem to be enthusing over the quinoa, but I do have to put in another word about the stuff. I've used the quinoa flour twice now, and really like the results. I made buns and now bread with it, and both times have really enjoyed the flavour and texture it brought. Of course I only added 1/2 cup to 3 1/2 cups wheat flour, since other flours can make crumbly, wierd bread.
