For those of you who've been eagerly reading our blog from day one, you may recall some posts about quinoa (grain of the gods), here, here and here. A year later, I still have some of my quinoa stash leftover, just waiting for an opportunity to be baked into something delicious. So when Cecelia discovered Megan's blog, Food and Whine and the recipe for Quinoa Coconut Cookies, I was intrigued to bake these healthy-ish cookies for my cookie-hungry daughter (lately everything vaguely cookie-shaped is "cookie? cookie?"). And they are really quite tasty. I made some tiny little ones since for all her talk, Julie often can't commit to a whole regular-sized cookie. If she actually eats and like these, I might consider purchasing more quinoa... I like that it's from a Saskatchewan company!
